And that, in a nutshell, is what drives award-winning chef and mixologist, Niles Peacock, to pursue his audacious dream of creating the best pizzas in the world. Niles is based in the heart of the Pacific Northwest’s vibrant culinary scene. His signature restaurant, Niles Peacock Kitchen and Bar, is a cocktail-centric establishment featuring national award-winning, stone-fired pizza and craft cocktails just north of Seattle on the beautiful Edmonds, Washington, waterfront. He credits his creativity to his father, Gary Peacock, a world-renowned jazz bassist who played with the likes of Miles Davis, and his mother, Nancy, a retired oil painter whose paintings decorate his restaurant. While pursuing a career in fashion design in New York (he designs his own suits for public events), Niles worked at restaurants to pay the bills and soon became immersed in the art of craft cocktail-making. He quickly established himself as an award-winning bartender who’s now featured as an annual presenter at The James Beard Foundation’s “Taste-America – Seattle” charity event. While opening his new restaurant during the pandemic, Niles shifted his attention to the art of pizza making. With the support of his mentor and fellow World Champions Pizza Team member, Will Grant, he became determined to perfect a sourdough crust and then elevate his new skills through the power of competition. Within a year, Niles rocketed from pizza novice to international and industry acclaim. Since bursting onto the pizza competition circuit in 2022, he has earned numerous elite recognitions, including the Galbani Professionale U.S. Pizza Cup Champion “Best Pizza in America” award.
His meteoric rise to success doesn’t surprise anyone who knows Niles. From surviving a bull-pitching in the Running of the Bulls, to managing a star-studded bar in Miami, Niles has never hesitated to embrace life to its fullest - and has the stories to prove it (The True Tall Tale of Pizza-Making Niles Peacock). But in his hometown of Edmonds, Niles is known as much for his giving spirit as his award-winning pizza and cocktails (which explains the name of his popular cocktail, “The Answer is Yes”). When not serving customers at NPKB, he’s serving his community as a board member for the Edmonds Center for the Arts, a weekly volunteer at the local food bank, and a dedicated supporter of dozens of annual charity fundraising events, including for the Make-A-Wish Foundation, Seattle's renowned Seafair festival, and the Seattle International Film Festival. “I am always looking for ways to be of service,” says Niles. “That’s what makes me happy, is supporting the people around me.”
